Beef Enchiladas and Mexican Rice

Beef Enchiladas with Mexican Rice

Mexican food is at the top of my food favorites list. This Beef Enchilada recipe is amazing! It is not a hard recipe to follow, but it definitely has a few steps involved. But…..I hope you will believe me when I say it is totally worth any effort you exert in the making of this meal. 🙂

They are full of flavor, not dry and are so great smeared with sour cream and avocado and salsa. I have tried many a enchilada recipe and Continue reading

Zuppa Toscana Recipe

Zuppa Toscana Recipe

Comfort Food, just those 2 little words are even comforting! Some days you just NEED a good, fill your belly and soul at the same time kinda food. Good food on “one of those days” is like an insta-fix to my attitude. It is so restoring.

One of my ULTIMATE comfort foods (and I have many) is the Zuppa Toscana soup from Olive Garden. It is warm and a bit spicy, full of yummy carbs; plus they even give you delicious breadsticks to go alongside it. Another ultimate fave on the comfort food list is pasta. Um, hello! Strawberry Vanilla Banana Bread Recipe

Strawberry Vanilla Banana Bread Recipe

Okay, so I am definitely a sucker for pretty much any recipe that either starts out with Chocolate,  or Strawberries. If it has both than WOW, I am smitten. I always seem to have brown bananas sitting in my kitchen. My family loves bananas, but we just never eat the entire bunch fast enough!!! Good thing they are so cheap huh?!?!?

Brown Sugar Strawberries

Brown Sugar Strawberries

Um, so I really really LOVE strawberries. But don’t you hate it when they are getting a little ripe and your kids won’t touch them anymore! What a waste huh? When this happens at my house I just cut up those little strawberries that my kids won’t eat (they say they are too squishy) and sprinkle some brown sugar on the top and magically all those previously “too squishy” strawberries disappear into mouths!

My kids and my husband absolutely love these strawberries! When the brown sugar dissolves and thickly coats each sliced berry it really is wonderfully delicious.

Yummy Salsa Recipe

Salsa Recipe

This Salsa Recipe is absolutely the best one I have ever made. The original recipe was shared with me by my friend Jamie over at I Heart Naptime. She found it originally from the Pioneer Woman. I have been using it for a couple of years now and after some tweaking and removing/adding ingredients it is now my “go to” salsa recipe that I never, ever tire of. Every time I make it for someone, they just can’t stop eating it.
